''A late start for this rather special, one-day course. Show yourself at 10 am, sip on a cup of tea or coffee, nibble on something delicious to keep your inner wolf at bay, and then settle down at 10.30 to watch and listen to gorgeous Rachel, the founder of Organico. I should explain for the uninitiated that Organico is the ashram, the temple, the palace of health food shops. Located in Bantry it has fans all over Ireland and – indeed – the world. Why? Because of its extraordinary selection of ingredients and products and – more crucially – because Rachel really knows her stuff. She is a superb and imaginative cook and she is well versed in the connection between diet and health. It is a bit like watching a magician at work for it is her habit to produce unexpected ingredients from packets, jars, bags and boxes and combine them to put the gore in gourmet. Actually, that sounded good when I thought about it but I realise it doesn't really work. Still, you get the idea. She won’t, I am afraid, be pinned down to definite recipes. However, she has promised to do a few dishes suitable for breakfast, lunch and dinner. As you would expect she uses fresh, seasonal ingredients. Lots of sampling and the course includes – roll of drums - a wine tasting of some very interesting organic wines by Mary Pawle.''
