Organic Sugar Kelp 40g
Organic sugar kelp is a type of brown algae with a subtly sweet, oceanic flavour, similar to kombu but with a softer, slightly sugary edge. This sweetness comes from its natural coating of mannitol, a sugar alcohol unique to this seaweed. Found in rock pools and gullies along the lower shore, sugar kelp is sustainably harvested from spring through autumn.
With a fleshy, slightly crunchy texture, sugar kelp is pleasant to chew and versatile in the kitchen. It can be used dried, rehydrated, fresh, or cooked. Whether simmered in soups, added to salads, pickled for a savoury twist, or baked into a sweet snack, sugar kelp brings a delightful depth of flavour to a wide range of dishes. It's especially complementary with beans, butternut squash, and a variety of vegetables.

Directions
- To rehydrate, soak in cold water for up to 10 minutes. The soaking liquid can be used as well.
- If salted, wash thoroughly before use.
- If using fresh, rinse gently before preparation.
- Use dry (wipe gently), fresh, or rehydrated in cooking. Simmer for up to 40 minutes.
- Boil or steam for up to 30 minutes and serve with butter.
- Cool, slice, and add to salads.
- Use in desserts or ice cream by boiling with beans.
- Add to pickling recipes for savoury flavour. Pickled kelp can substitute for cornichons or capers in tartar sauce.
- Bake to create a sweet, nutritious snack.
