Organic Valpolicella Ripasso Valpantena 2021 750ml
This organic Valpolicella Ripasso from the Valpantena valley offers a rich and full-bodied red wine experience. Crafted using Corvina and Rondinella grapes, this wine undergoes refermentation on Amarone marc, enhancing its complexity and depth. The result is a concentrated ruby red wine with intense aromas of blackberry, blackcurrant, withered violet, black pepper, and balsamic notes.
Grown in calcareous soil rich in potassium, calcium, and magnesium, the vines are cultivated using Guyot and Sloped Pergola Veronese techniques. After harvesting in September and October, the wine is macerated in steel vats at 25°C with daily racking and délestage. It is then aged for 24 months in the producer's local winery, ensuring a smooth, soft palate with well-balanced tannins.
Ideal for pairing with grilled meats, salami, and aged cheeses, this wine is best enjoyed with traditional dishes like polenta and soppressa. Serve at 16°C to experience its full expression.
