The taste of this young miso is light and mild. It is made with rice, koji (a fermentation starter), soybeans, rice and sea salt. Because the preparation contains considerably more koji and less salt, the natural fermentation time is only 2 - 8 weeks. After this period, the miso is fully matured. Use the miso in the soup or to refine dishes that are otherwise prepared with cream or milk products.
