Salvestroles belong to the class of vital plant substances (secondary plant substances) that are metabolised in cancer cells in humans by the tumour cell-specific enzyme CYP1B1 and thereby trigger a number of different processes up to cell death, which then lead to a standstill or even a decrease in cancer.

Inside fruits and vegetables, salvestroles are part of the defence mechanism of plants. Salvestrols are phytoalexins whose formation is triggered by invading pathogens. If, for example, a ripe fruit is attacked by a fungus, the synthesis of a salvestrol specific for this pathogen is triggered.

Salvestrols are formed at the site, usually in the fruit’s skin or in the root of the plant, and penetrates the pathogen.
