She says… I’ve always loved baking from a young age (I’ve a serious sweet tooth!) but while I was studying in college, I realised what I was making wasn’t exactly the best for my health so I started experimenting with recipes and discovered a whole different way of baking. I began sharing my creations online and after a while built up the courage to create my own blog called ‘Tee’s Nutrition’ so I could share with others my passion for discovering nutritious recipes and food. The blog’s grown to Facebook and Instagram as well and everyone’s been really supportive. So as you can guess, I was head over heels when I got the job at Organico, and the opportunity to work with like-minded people who share my passion. I started off working in the cafe and assisting in the kitchen which I really enjoy because I’m learning so much more about food every time I’m cooking. My role has changed recently as I’m also now training to be the new cake baker, and I’m so excited to be learning all the baking secrets!! What I most enjoy about my job is being surrounded every day by organic, nutritious food and getting the opportunity to cook this food and share it with others, and seeing our customers get excited about our food as well, that’s really rewarding. The busy days are challenging but I’m surrounded by a great team who always look out for one another and there’s always a bit of craic around the place between ourselves and with our customers as well, so the long hours don’t seem that long after! In my spare time I do some nutrition coaching giving advice to individuals and groups which I find really rewarding, especially when you know you’re helping someone improve their quality of life. I’ve an interest in sports as well, playing football with my local ladies football team ‘Naomh Fionnbarra’ during the season and I love heading to Munster rugby games as well whenever I get a chance. As for my dreams and hopes for the future… travelling has always been a big one for me, I love seeing new places for the culture, food and scenery, so I’m looking forward to getting more countries ticked off the bucket list in the next few years.
