Fair Trade

Fair trade fortnight in Bantry, 2007, was a resounding succes. The Fair trade committee, including Liz Ewing from Organico, put together several very entertaining events. The main focus was on the visit paid by Renwick Rose from the Windward Islands Farmers Association, who came to Bantry on the 7th of March and had lunch in Organico Cafe before giving a talk on fair Trade in the Youth Cafe. Renwick was very enthusiastic about Ieland’s commitment to Fair Trade and said the ‘wherever I have had the privilege of visiting there has been a spontaneous outpooring of friendship and solidarity in keeping with the principles of the Fair Trade movement’. He described fair trade as a way of ‘contributing to the practical expression of a new trading relationship between consumers and producers based on social justice’.

The Fair Trade committee also held a delightful Cookery Demonstration profiling Fair Trade produce and hosted by John and Sally McKenna, as well as a coffee morning.

Organico Bantry Launches Solgar

In Organico we are delighted to be stocking Solgar’s products, as of Febuary 2007. Solgar are market leaders in high quality vitamins, minerals and herbal supplements, and have pioneered a huge amount of research into the field of complementary and alternative health. They are widely trusted and their research is second to none.

Over the next months we will be building up our range of Solgar products as we find out what our customers are looking for. Our staff are going to do Solgar’s retailer training as well, as their products are often unique and we need to be informed in order to advise our customers on them.

So far customer feedback has been very positive, especially on Celadrin which is an essential fatty acid product used in cases of inflamatory joint pain, and which several customers have told us is very effective.

Healthy Frying

The inspiration for this article was ‘Fats that Heal, Fats that Kill’ by Udo Erasmus (published by Alive Books).

‘Frying with oils once will not kill us, and so it seems harmless. Our body copes with toxic substances. But over 10, 20, or 30 years, our cells accumulate altered and toxic substances for which they have not evolved efficient detoxifying mechanisms. The altered and toxic substances interfere with our bodies life chemistry, our ‘bio-chemistry’. Cells then degenerate, and these degenerative processes manifest as degenerative diseases.’ (Udo Erasmus, 1996:125).

Udo Erasmus would prefer we never touched a frying pan, much less ate chips. However, most of us will find it hard to give up frying altogether, so it seems important to me to learn the better way to fry. And even more important, it seems essential to understand a little of the way frying affects (‘alters’) our foods, and the way altered or toxic fats affect our cells.

Frying is not recommended, because the temperatures used when frying foods are too high. When foods turn brown, they have been burned, and the nutrients in the browned material have been destroyed. Proteins turn into carcinogenic acrolein. Starches and sugars are browned – caramelised – through molecular destruction. Fats and oils are turned into smoke by the destruction of fatty acids and glycerol.

These temperatures are particularly damaging to the oils that are best for our health-oils such as flax seed oil that are high in Essential Fatty Acids. These oils are highly unstable and change, when they come into contact with high temperatures, oxygen and light, into free radicals, which cause all manner of health problems. Therefore what Udo recommends is that we save these oils for salads and use other fats for cooking that are more suitable.

Although frying cannot be recommended for optimum health, there are some fats that are more suitable for frying than others. Saturated Fatty Acids (SaFAs) are less valuable to our health but they stand up better to higher temperatures. The least damaging fats for frying with include coconut, palm oil and butter – in small quantities. But even when cooking with these oils we must be careful that they do not smoke, as smoke in this context is made up of destroyed fatty acids.

Unrefined olive oil is also suitable for low temperature frying, as are ‘high oleic’ safflower and sunflower oils, and refined peanut and sesame oils.

Traditional Chinese cooks, according to Udo, out water in their woks before oil, which keeps the temperature down below 100 degrees centigrade, and therefore does not destroy the EFAs in the oil. Another method used by European Gourmet cooks is to put the vegetables in the pan before the oil. This protects the oils from overheating, the vegetables from burning and supports our health better.

Summary:

Good fats for cooking:

  • Butter
  • Tropical fats
  • High oleic sunflower and safflower oils
  • Refined sesame and peanut oils
  • Olive oil

Best Methods for frying:

  • Put water, soya sauce, garlic and onion in the pan with the oil (garlic and onion contain sulphur which provides a measure of anti-oxidant protection)
  • Put your vegetables in the pan first – and never heat the fat up to smoking before you cook.
  • Minimise burning of food
  • Add plenty of EFA rich oil to your food after cooking, and eat plenty of anti-oxidant rich foods to minimise health damage due to free radicals (for example, seeds such as sesame seeds, sunflower seeds, and hemp seeds and oils such as hemp seed oil and flax oil).

Because we believe that organic food is always better, for you and for the environment, we would always reccommend that you buy organic oils whenever possible.

West Cork Run

The West Cork run is in its 2nd year and is well on its way to becoming one of the most enjoyable half marathons in Ireland. The route lies along the main road from Glengarriff to Bantry with the sea to the right of the road for nearly the whole way. This is one of the most beautiful routes in Ireland (I enjoy it every day on the way to work!)

This year the run will take place on the 6th of May and there will be three different events – a half marathon, a 10 k walk and a ‘Kids dash’. Last year Organic entered a team and everyone completed in very good time – and we were all delighted with the tee shirts and mugs that we got to take home as momentos.

West Cork Literary festival

Organico Cafe is delighted to be involved with the West Cork Literary Festival again this year. the Cafe will be the venue for the Literary Club, which will offer organic food and wine, as well as music, games and a literary quiz. We will open from 6pm – 9pm Monday to Thursday.
The West Cork Literary Festival is a festival for writers and readers alike and attracts at least 150 people to Bantry every year. The programme is very varied – the 2007 workshops range from song writing to media, poetry, and sportswriting – and this year Gavin Kostick of the Fishamble Theater Company is to tutor a playwriting Workshop. Elenaor McEvoy is coming to give the Songwriting Workshop as well as a live performance.
From what we have seen in Organico Cafe the Festival is throughly enjoyed by all the attendees. Many of those who are accepted for publication in the Fish Anthology come and of course the winner (of the €10,000 prize) is sure to attend. The comapartively small numbers mean the Festival creates an intimate and friendly atmosphere, and the Workshop attendees get a lot of hands on attention from the leaders.

Organic Veggie Bean Chilli

This warming organic Chilli is always best the next day, so make plenty and keep or freeze it. This recipe when served with organic brown rice will serve 4. We prefer Biona organic beans and tomotos for these recipes. Worth the extra cents.

Ingredients

  • 3 tbsp olive oil
  • 2 garlic clove, finely chopped
  • 1 large onion, diced
  • 2 carrots, diced
  • 3 cm fresh root ginger, grated1 red pepper, diced
  • 1 green pepper, diced
  • 1 courgette, diced
  • 4 tbsp tomato paste
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp crushed chilli flakes
  • 1 heaped tsp cocoa powder
  • 2 can chopped tomatoes, 400g
  • 1 can kidney beans, 400g
  • 1 can harricot/cannolini beans, 400g
  • salt and pepper to taste

To Serve

  • Handfull of organic corriander, chopped
  • Minced onion
  • grated cheddar cheese
  • Tabasco (for the real chilli fanatics) or Green Tabasco (not organic but great flavour!)
  • Creme fraiche or natural live yoghurt

Method

Heat the olive oil in a large frying pan over a medium heat. Add the onion, carrot garlic, ginger, cumin and paprika and fry for a few minutes, stirring all the time. Tip in the red pepper and courgette and cook for 2 minutes. Add the tomato paste and fry for a further 2 minutes. Empty the can of chopped tomatoes and their juice into the pan and simmer until cooked down and thickened and the vegetables are soft. Wash kidney beans and add along with the chopped coriander and cook for a further 5 mins. Serson with salt and pepper.

Serve piping hot, with organic brown basmati rice, and a selection of the toppings mentioned above. If you are having people to dinner you can put all the topping out on the table and let your guests chose their favourites. Another option that we offer in Organico cafe is to serve the chilli in a wrap – in that case heat the wraps (tortilla wraps made without chemicals are available in most good health food shops) and put them on the tabls covered with a tea towl to keep them warm. Put everything else in serving dishes and let your guests mix and match! Make sure lots of napkins are to hand!
